The regulation requires acidified
food products be reviewed by a process authority. A process authority is a “qualified person
who has expert knowledge acquired through appropriate training and experience
in the acidification and processing of acidified foods.”

Officials maintains a list of Process Authorities across the country. This is
not an exhaustive list. You may be able to find Process Authorities in your
area. We suggest you check with your
